Salad with Chicken, Blackberries, and Manouri Cheese
Ingredients 1 package (150g) mixed lettuce 2 cups purslane leaves only 3 tablespoons almond flakes 20 blackberries 1 red apple, sliced 200g manouri or any soft cheese you like For the chicken 2 pieces (500g) chicken breast 4 tablespoons yogurt 1 teaspoon mustard powder 1 teaspoon oregano ½ teaspoon salt A pinch of black pepper For the dressing 4 tablespoons olive oil 2 tablespoons balsamic cream vinegar 1 tablespoon honey 1 teaspoon salt

Steps
For the chicken: In a bowl, mix yogurt, mustard, oregano, salt, and pepper. Add the chicken and coat it well with the sauce. Let it marinate for 2-3 hours or overnight.
Take it out of the fridge to reach room temperature. Place it in a baking dish with the sauce and bake in a preheated oven at 180°C for 30 minutes.
For the dressing: Add all ingredients to a blender and blend until smooth. In a salad bowl, combine lettuce, purslane, almonds, blackberries, apple, manouri cheese, and chicken cut into strips. Drizzle with dressing and serve!
