At Vlassides Winery, tasting becomes a fun adventure with the 4×4, blending wine and cheese perfectly. You’ll enjoy 4 different wines – 2 whites and 2 reds – paired with 4 selected cheeses, showing how important good pairing is.
The journey starts with Grifos 2, a fresh 2025 wine made from Xynisteri and 5% Sauvignon Blanc. It’s soft and pleasant, best enjoyed with manouri, a mild Greek goat and sheep cheese. Next, we try the 100% Sauvignon Blanc of 2024, bursting with tropical fruit and citrus aromas. It pairs excellently with chèvre, a smooth goat cheese.
The third wine is 100% Syrah of 2023, aged in French oak barrels. It has rich aromas of black fruits and spices, full-bodied with a long finish. This goes well with kefalotyri, a strong yet mild Greek cheese that balances the wine perfectly.
The experience wraps up with 100% Cabernet Sauvignon of 2021. This lively wine has strong tannins and aromas of berries, smoke, coffee, and dark chocolate. It’s best paired with 24-month aged parmesan.
